Beer-filled chocolate dreams
The flagship product of this family business in the historic center of Freistadt is the “Freistädter Bierpralinen” (Freistadt beer chocolates), which Thomas Friesenecker created over 15 years ago. And as the name suggests, Freistadt beers are the most important ingredient in this sweet beer-based temptation. Half of the filling consists of Ratsherren beer and the Pegasus variety, the dark beer from the brewery just a stone's throw away. It is coated in delicate dark chocolate. And the taste? In short: a dream.
From idea to trademark
When searching for ideas for his own creation, Thomas Friesenecker benefited from the experience he had gained in another region with a strong affinity for beer, namely Munich. As a pastry chef at the renowned restaurant “Tantris,” which has been awarded no less than four toques, he had already refined desserts with beer reductions. When he took over the family business in Freistadt, he put his idea for a very special praline into practice. “The connection to Freistadt and Freistadt beer was very important to me,” says the master confectioner. The unique combination of beer and chocolate quickly became the trademark of the house.
Beer and chocolate tastings
Beer and chocolate are also combined in other ways at the Hubertus pastry shop, for example during special tastings: while guests sample hand-made chocolates, the host, who is a trained beer sommelier, serves the perfect beer to accompany them. Thomas Friesenecker has a wide selection to choose from: there are four different types on tap, complemented by a selection of bottled beers.
Café & bed and breakfast
You can enjoy the sweet and beer-based specialties not only in the cozy atmosphere of the café, but also in the outdoor dining area. This is located directly on the Freistadt city moat, where you can experience the medieval flair of the brewing town. Thomas Friesenecker and his wife Rita also run a lovingly furnished bed and breakfast next to the café. The guests are a colorful mix: “Many spend their short vacation with us and use the house as a starting point for city and brewery tours, as a base for excursions to South Bohemia, beer bike tours, or a herb hike in Hirschbach.” The Hotel Hubertus is also well equipped for seminars. Thomas Friesenecker also enjoys cooking for family and other celebrations, serving down-to-earth dishes from traditional home cooking.
