Mühlviertel bacon dumplings
Ingredients:
- 300 g boiled warm grated potatoes
- 250 g coarse-grained flour
- 80 g melted butter
- 2 eggs
- Pinch of salt, nutmeg
Filling + topping:
- 300 g lean small bacon cubes
- 1/4 l cream
- 3 eggs
- Pinch of salt
Preparation:
Knead the warm grated potatoes with the flour, melted butter, eggs, salt and nutmeg to form a smooth dough. Cut the dough into 12 pieces. Press each part flat, cover with diced bacon and shape into a dumpling. Place the dumplings in a greased tin and bake in the oven at approx. 170 degrees for 30 minutes. For the topping, whisk the cream with the eggs and salt and pour over the bacon dumplings. Now wrap the dumplings for another 15 minutes.
