We, Eva & Norbert Eder, are committed organic farmers. On our farm, the Pankrazhofer, in Tragwein, apples and pears ripen in meadow orchards, old grain varieties grow in the fields and calves graze with their mother cows in the meadows. We value the precious resources that nature gives us and transform them into unique moments of pleasure. In this way, our raw materials receive the appreciation they more than deserve.
Cider making has a long tradition in Upper Austria and in the Mühlviertel, our home region. At Pankrazhofer in Tragwein, the best has been extracted from the orchard fruit with the press for generations. Norbert Eder finds it difficult to stand still, so his passion for good, high-quality food has driven him to develop well-known traditions further. Fruit varieties that ripen side by side in the Mühlviertel orchards go into the press separately and as a single variety, only to combine in harmony to form a new whole after fermentation. They cannot and will not deny their terroir - their Mühlviertel homeland.
As a cider maker with close ties to nature, Norbert Eder processes the fruit using the latest technology to preserve its aroma. That's why the Eder family is guided by nature: the harvest is different every year, as is the range of Pankrazhof ciders and juices.
A wish became reality - Eva Eder from Pankrazhofer and Barbara Peterseil from Bioobstbau Peterseil had the dream of making their own vinegar.
Due to the vinegar bacteria, the must makers did not want to produce vinegar on their own farms, so another solution had to be found. This is how Birgit Stutz-Prückl from the Dambachler distillery came into play.
Together they formed the Organic Vinegar Makers and dedicated themselves to the ancient art of vinegar production. The basis for the high-quality vinegar matures in the cellars of the two companies Pankrazhofer and Peterseil: the best apple and pear must. The must is then transformed into fine vinegar in the Mühlviertel vinegar factory Dambachler and finally refined further in the cider houses. This results in 4 types of genuine fermented vinegar. The vinegar makers do this with a lot of love and passion.
The entire Pankrazhof product range is available in the farm store. In addition to organic cider, organic juice and organic vinegar, there is also an organic frizzante, Hugo with cider, brandies and liqueurs as well as organic linseed and organic spelt from the farm's own cultivation. The products can also be individually gift-wrapped on request.

From the tree to the bottle
On our guided tours, we take you on a journey from the orchard, through the juicer and the cellar to the enjoyment of the finished products and their special properties. Under the mighty cider pear trees, you will learn about everything that is now grown and produced on the farm. In the Schaumosterei you can see the equipment used to process fruit into juice, cider and brandy. Eva has been passionate about vinegar production for several years. Together with two colleagues from Mühlviertel businesses, they have joined forces to form the "Organic Vinegar Makers". The best way to find out how this came about is for Eva to tell you herself, while you taste the musts, frizzante, vinegars, mustards, ... for yourself.
