A Dalken like from Grandmother's kitchen
The love of beer and the tradition of brewing culture have very deep roots. 25 member companies of the "Mühlviertel Wirtshauskultur" started searching for culinary border crossings and brought some surprising things to light.
Strongly established in the culinary tradition of the Mühlviertel, these restaurateurs set themselves the goal of giving their customers a regionally connected and contemporary twist on local food. While they were looking for the taste of the region, they came across an old culinary treasure which combines the palate of southern Bohemia and Upper Austria in wonderful harmony: the Dalken. This pastry, which comes in many versions, baked in the dents of a specially formed pan on the hearth, was one that the member companies of the Mühlviertel Wirtskultur (innkeeper's culture) wanted to revive. To do this, they consulted the old recipe books and conjured the Dalken back onto the plate the way it was in the olden days in all its forms – both sweet and savoury.
